Full Proof Pizza – Beverly Hills

Can pizza made with whole wheat dough taste good? The answer is a resounding, yes! The team behind Lodge Bread, famed for their naturally leavened dough, launched Full Proof Pizza, using wholegrain sourdough for their New York style pies. Beginning as a nighttime pop up in Lodge Bread in Culver City, it was so successful that it’s spawned its own independent location in Beverly Hills.

Focused on takeout and delivery, the Beverly Hills shop sports a 80’s retro vibe, including neon lights and a Stranger Things pinball machine.

Variety is the spice of life and Full Proof gives you the option to choose two different flavors for your pizza – something I wanted to take advantage of because my husband doesn’t eat meat, ordering a Wild Mushroom/Spicy Sausage pizza. As much as I love béchamel sauce, the mushroom pizza was a little bland and could use a little something extra (caramelized onions, perhaps) that would make it great.

The sausage pizza was a solid win, with the Calabrian chiles giving it some heat. Dipping it into their housemade ranch dressing helped sooth the burn.

With the thin crust, the difference in the dough isn’t really noticeable until you get to the edges. That’s when you can tell that you’ve got a wholegrain dough, with a nice chewy texture.
