
All the press about how there’s going to be a taco truck on every corner if Hillary wins has made me crave tacos. On a beautiful Labor Day, we ventured to Santa Monica to enjoy the beach and play some Pokemon Go when we saw the Trejo’s Taco Truck. It was like a sign from God. So even though we were still full from lunch, it seemed only right to pay the truck a visit.

Danny Trejo, an actor probably best known for playing villain roles, opened his restaurant earlier this year. Even though he plays a baddie, Trejo’s food is mostly organic, and even offers vegan items. With the success of his first outpost, he’s subsequently working on a second location and recently launched a food truck. It’s this food truck, with his face on the sides, that we were lucky enough to spy parked on Ocean Avenue in Santa Monica.
Trejo’s Truck had a more limited menu with four taco options, including one vegan option – the rainbow cauliflower taco. With its different hues of cauliflower contrasting with the pickled onions and delicate cilantro microgreens, the taco was a beautiful work of art. As lovely as it was, it couldn’t hold a candle to…

…the carnitas taco with grilled pineapple. This taco was perfectly executed and accented with a spicy chile sauce.
My only regret is that I wasn’t hungrier – then I could have eaten more! Still, our early Taco Tuesday celebration felt good, our own little political protest wrapped up in an organic tortilla. So while we still wait for the taco trucks to magically appear on every corner, I’ll be perfectly happy driving miles to get tacos from Trejo’s Taco Truck.
